Raw broccoli salad with raw cashew dressing – recipe

When I tasted the raw broccoli salad my friend Melissa of Nature Deva brought to our attachment parenting picnic a week ago, I knew I had to get the recipe from her. I’m not usually a big fan of raw broccoli, but she shredded it in her salad, and that combined with the raw cashew dressing was a match made in taste bud heaven.

I made it for dinner on Sunday and the family gobbled it right up. I’m still enjoying the leftovers.

Here is the recipe, courtesy of Melissa (who recently wrote about her experiences eating a raw foods diet for the past six months).

Raw broccoli salad

Broccoli Salad

5 cups shredded broccoli
1/2 – 1 cup red onion
1 cup raw sunflower seeds
1/2 cup raisins

Add all to a bowl.

Dressing
1 cup raw cashews
3T raw agave nectar
2T raw apple cider vinegar
1/4t sea salt
1/4 cup water

Blend the dressing in a *blender (you may want to soak the cashews in water for an hour just to soften them up if your blender is not high speed to make it easier to blend or you can try first in the food processor then the blender). Pour over the broccoli mix and mix well with your hands to really coat it. Enjoy!

*My notes: I used my food processor to shred the broccoli, chop the cashews and mix up the dressing. My blender isn’t a super wowee one (though Jody and I were ogling a BlendTec at Costco this weekend – ooooh, ahhhh), but I heart my food processor (that Julie from Chez Artz sold me last year when she upgraded to a bigger one).   1. Agh, Broccoli gives me gas. I do love it though and this recipe looks yummy. Maybe I should make some before a date with a guy I’m not really interested in … then the gas won’t really matter…

  2. I make a raw broccoli salad.I cut them into little florets,add finely sliced carrots,spring onions,lots of parsley,red wine vinegar,salt and oil.I prepare it the night before.It makes a great packed lunch and the rawness goes away during the night ;)

  5. i do not like the taste of raw broccoli alone i have been eating raw for 3 mths. now and the results are fabulous as raw foodist most of my bulk meals are veggies i have this little trick its called tahini paste well this paste is the flavor base that coats my broccoli and kale wraps it is as following: tahini paste 2 tbls.of paste 2 tbls. os balsalmic vinegar sea salt (just a a pinch) and 2 tbls. of water depending on your desired consistency mix well until paste is the consistency of flowing dressing i added celery to my broccoli this is truly a treat! and it is very beneficial the tahini paste is so protein packed so enjoy

  6. these are kale wraps you will need the following large kale leafs,cukes,carrots scallions or red onions grape tomatoes and leaf lettuces i use spring mix,and celantro julien your cukes and carrots and slice your onions now take your kale leaf and place it vein side up facing you score the middle removing the the “rib” and stalk be careful not to score all the way down the leaf you are going to leave a 5-6 inches of unscored leaf at the end so as to not cutting it in half completely now in scalding hpt water place your leaf in the water no longer than 30 seconds this will soften the leaf so it is pliable and retain its vital nutrients remove your leaf and lay it out flat vein side up again place your lettuce and other veggies on top of the leaf and then drizzle your tahini dressing over the salad ond roll your leaf you can tuck your ends in as you roll you are going to be rolling away from you this is a super nutritious meal that feed your cells so after eating a large wrap you will not be hungry for up to 6 hours hope that you like it

  7. I absolutely love this salad. I make it ALL the time for picnics, camping trips and for when company comes over. Everyone just thinks it’s regular broccoli salad with mayo and I have to tell them that it’s raw.

  9. We had our goddaughter and her parents over for dinner recently. I had received broccoli from our CSA and I wanted to do something different. I googled raw broccoli salad and your recipe came up. It was the hit of the party!!! The only change I made was to not shred the broccoli, but chop it in small florets. I am making it again tonight. Thank you for the inspiration!!!

    I added shredded carrots and up’ed the sunflower seeds for added crunch. MMMMMmmmm…DELICIOUS! I Absolutely loved this salad with mayo and bacon in the SAD days…but this? this is even better!

  11. This is incredible! I’ve made it every other week for the last couple months and I love it more each time. In a pinch, I had to substitute flaxseed for sunflower and almonds for cashews, but even THAT was good.
