A 5-minute healthy lunch idea: tortilla pizzas


I’ve been buying Stacy’s Organic Tortillas in bulk lately and using them primarily for making sandwich wraps. The kids love the wraps and they worked well in their camp lunches this summer and in school lunches for Ava in kindergarten. I admit I enjoy them myself as well.

However, I may have found a new use for the tortillas that I love even more than the wraps. Thanks to my friend Melissa, I am now making 5-minute tortilla pizzas! I know I said they were for lunch, but I’ve made them for dinner too on those nights I need a quick meal.

5-minute tortilla pizzas

Ingredients:
- Tortilla (white flour, wheat flour, whatever you desire)
- Cheese (shredded mozzarella, goat cheese, soy cheese, whatever you prefer)
- Sauce (store-bought tomato sauce is easy, but so is homemade canned sauce – provided you made it prior to this, pesto works well too)
- Optional: additional toppings. I would make sure they are already cooked and don’t add too many or it could affect the quality of the pizza. Also, because the crust is very thin (it’s a tortilla after all), you don’t want to weigh it down with an overload of toppings.

Instructions:
Lay a tortilla on a pizza pan, cookie sheet or baking stone. (I recommend only one tortilla per pan unless two fit well. They didn’t cook as evenly when I tried to put two on one cookie sheet.)
Spread a thin layer or sauce on tortilla. (Add additional toppings if desired. Remember, don’t add much or it will weigh down your tortilla too much.)
Sprinkle with cheese. (The kids can totally help out with making these too, though that might add a little extra time to the preparation.)

Put in oven under broiler until cheese melts. This only takes a few minutes so definitely keep an eye on it.

Remove from oven, let cool, slice and serve or save to pack in a school lunch the next day.

The kids love them and so do I. Easy, peasy and oh so cheesy! ;) Thanks again, Mel!

  1. Hey Amy :) Using whole wheat pita bread is a great easy pizza crust too :) Thanks for the reminder though, my kids love making homemade pizzas for lunch and have been using refrigerated biscuit dough to do it lately, but that takes a lot longer.

  2. what a great quick and fabulous lunch idea. do they sell those tortillas at vitamin cottage? where do i get them? could I use regular tortillas or are they not organic? sorry, i’m just learning all about organic eating and crunchy, you seem to know the best on organics. i tell everyone i know at my daughter’s play group about your blog, crunchy. i get a lot of teasing from them because they say i should spend more time with my family than on the blog! i guess i need balance, but with ideas like these, i just can’t stop reading…. thanks again, crunchy!

    Thanks for posting this! I love food ideas!! :)

    Jennifer, do you just use a basic biscuit dough? How long do you put it in the fridge and do you just roll it out in to two small pizzas? I make biscuits quite frequently but never thought to make it into a pizza.

    A, another thing I do w/ the tortillas for a fairly quick meal is do a mexican pizza. Add refried beans instead of sauce (you could mix some salsa in if you wanted) and top w/ whatever you want. I do olives (you could obviously buy the sliced olives so you could save time) and mushrooms or whatever. They are super yummy. THEN if you wanted to take more time and add more fat ;) you can fry the tortilla to make a crunchy mexican pizza. Oh so good but definitely not as healthy. hee hee

    And lastly, does Ava like them in her lunch? I’m so running out of lunch ideas and need some more! I was wondering if C would like them since they’d be cold by the time he ate them. Does she? Thanks again!!

    the tortillas don’t have to be organic to be used in this recipe.

    brandy – yes, ava will eat them cold in her lunch, but she’s generally not picky about food at all. not to say that creed is, but ava will eat anything. ;) now that u mention it, i have made mexican pizzas like that before too w/ corn tortillas.

  6. Dreena Burton has a hummus tortilla pizza in one of her cookbooks… I’m usually lazy and just brush olive oil on mine and pile on the veggies. still good!

  7. we just press the biscuit dough out flat instead of baking them first. Once they’re flat we put on sauce and pepperoni and cheese and it will rise a little bit when you bake it.

  8. I use tortillas for pizza too – it was a weight watchers tip.

    I like preheating my pizza stone in a 425 oven and then sliding the pizzas onto the hot stone. The tortilla crust gets very crispy using this method. I bake them for anywhere from 6-10 minutes depending on the toppings.

  9. Okay, must be a global convergence of some sort because I made these for my kids last night–and I thought I was being original! They loved it. I used the smaller tortilla shells and baked them in the toaster oven. Quick, easy and a big hit!

  10. Best recipe ever! Just made them and they are EASY, and taste good. Plus, my picky eater, who usually doesn’t like pizza, loved that I could only put a tiny bit of sauce on his pizza. We have enough left over for lunch tomorrow. Thanks for the recipe! :-)

    I have some ingredients for pizza, but I’m too lazy to make dough – this is an awesome solution.

  15. I buy Stacy’s sometimes too, but the tortilleria at Boulder Farmer’s Market is certified organic now too and their tortillas are MUCH better!

    I make these for the kiddos all the time for their school lunches and another option is to put refried beans on instead of the sauce and some black olives for topping. Then I give them a little cup of guacamole or sour cream to dip and they’re happy as clams!
